Thanks folks!
It turns out we had to re-do the initialization slowly. The default
for the number of disks we had was RAID-6, which is why the capacity
was 6TB. When we realized it and changed it to RAID-5, the capacity
went to 7GB as we were expecting.
All this was done via the hardware RAID controller software, as many
of you suspected.
