Georgia Grilled Pork Chops & Fresh Peach Salsa

Yield: 4 servings

2 ea Peaches pitted & diced
1 ea Ripe tomato seeded & diced
1/4 c  Onion diced
2 tb Fresh cilantro chopped
2 tb Fresh lime juice
1/4 ts Red pepper flakes to taste
Salt to taste
1 ts Cumin ground
1 ts Chili powder
Salt & gpepper to taste
2 tb Olive oil
8 ea Pork loin chops

Pre-heat your grill for med-high heat.
Lightly oil grill grate then set 4" above coals or flames heat.

Salsa: 
Put peaches, tomato, onion, cilantro, lime juice & red pepper flakes in a bowl.
Toss to blend then season to taste with salt.
Cover & refrigerate 30 mins. to blend flavors. 
Stir cumin, chili powder, salt & pepper together in a small bowl.
Put olive oil in a small bowl.

Chops:
Brush your pork chops with oil then season both sides evenly with your cumin 
mixture.
Put pork loin chops on pre-heated grill.
Cook until lightly browned & juices run clearor to desired doneness.
Place pork chops on serving plates & top with a generous spoonful of salsa.
