Xcopy is the most preferred way. One should understand that, when we deploy, only aspx files and the compiled dlls [considering that u r using VS.Net] should be sent to the client. Here XCopy is the best mode to apply patches. We do it quite often in our projects. There will be minimal downtime[say 20-40mins]. If it is winforms, BITS is also a good option, if you are hosting under winxp. Try No touch deployment.
