In general, as long as both displays are the same resolutions, timing, and size you can do that. There is only one LCD interface on the processor.
As to the capes, they have no top side connectors, because putting anything into top side connectors would cover up the display. Display capes are designed to be the last cape on the stack so they can be visible.
