Is it emmc or the sdhc card??

Your settings seemed to be getting overwritten by other settings (could be
in the other bootable device).
You could probably try the following:
1.Stop the u-boot boot process at the count down .
2.At the u-boot shell, create new or update env variables with your desired
values.
3.Save these environment variables.
4.Restart the board.
5.Linux could be loaded through NFS boot.
