This surprises me, though maybe it shouldn't. The BPS was built for exchange 2003, but the server is now 2007. Could it be that MS is using the same version of MAPI & CDO in those different versions? Is it possible that it is working because 2003 is still running, even though my mail store has been moved? Will it stop working after we finally shut 2003 down?

Art, it depends on the version of MAPI and CDO dll's you have on the system. Usually message delivery still works, but calendar and contacts break. Last week we moved the IT dept. mailboxes. I have not even begun the steps outlined in KB14502 for migrating a BES. My BB is still working perfectly as far as I can tell. My understanding is that it shouldn't.
