Here's what I do. I'm assuming you're on Windows.

Shutdown down the Slimserver service and kill the SlimTray exe to
remove lockes on the database etc..

Then zip the entire c:\program files\Slimserver directory. I normally
call it Slimserver_dd_mm_yy.zip.

Now download the zipped nightly (not the .exe with the installer) and
extract it somewhere like c:\temp.
You can now delete everything in c:\program files\slimserver.

Copy the extracted files into c:\program files\slimserver and run
slimtray.exe. Then do a full rescan to rebuild your database.

If thing go badly you can just delete everything from the slimserver
directory and restore back to 6.1.x using the zipped archive.
