Something definitely not right there. The log file should fill up almost instantly.
You mentioned you're on 6.5. Did this behaviour first start when you upgraded to 6.5 beta ? There have been a number of database changes between 6.2 and 6.5 branch and I believe the current advice is to delete your slimserversql.db file before upgrading. The two files I back up are slimserver.pref and slimserversql.db - the prefs file and the database respectively.
