After a couple of cups of coffee and a lunchbreak in which I actually had some time to look at things properly, I'm now sorted. For some reason, I have a user on my system called slimserver, but run slimserver as a different (non-root) user - a nice red herring! The log file was owned by slimserver, and so hadn't got permission to be written to by the slimserver process once it had given away root privileges.
