This controls transcoding and gives the server a choice should one of
them fail.  Typically you have the built-in format (if available), then
lossless uncompressed (WAV), then lossless compressed (FLAC), then lossy
compressed (MP3).

You have multiple choices so that the server will try them all before
it gives up and fails with "cannot open file for".  It tries the
native, built-in one first, then the lossless uncompressed, then
lossless compressed, then lossy compressed, in that order.
