I have no idea about the scanner problem, but to revert to an earlier
version:

sudo apt-get remove slimserver
--------------------
Then install from an earlier .deb.
However I recall that the remove leaves some directories in
/usr/bin/slimserver /etc/slimserver and /usr/share/slimserver that you
may have to remove manually using:

sudo rm -r /usr/bin/slimserver
--------------------
etc.
