I had a similar issue on my first install of SC7 - the server automatically stopped after a few seconds. I'm on OSX 10.4.10.
Managed to get things working by deleting the cache files located in ~/Library/Caches/SlimServer and then reinstalling. It might be worth looking into the log file to see why the server is stopping as well. The error I was getting was: Warning: Database error: Can't DROP 'thumb'; check that column/key exists at /Users/goog/Library/PreferencePanes/SqueezeCenter.prefPane/Contents/server/CPAN/DBIx/Migration.pm line 115.
