I'm a similar situation... I'm running on a Kubuntu machine (7.01 squeezecenter). I had a number of album art images in the folders, which SqueezeCenter picked up nicely, however I many were the wrong images.
See, I'd used this album art downloader program (http://www.unrealvoodoo.org/hiteck/projects/albumart/), which tries to guess the correct images, download them from various Web sites, and automatically insert them into the folders but it doesn't always get them right. So I went back and manually changed some of the images or deleted them if I didn't have a better replacement. Afterwards I did complete update (cleared the SqueezeCenter library and rescanned everything) but unfortunately it doesn't update the images. The old images still appear in my controller and the web interface, even if they were deleted from my hard drive.
