There is little difference for the moment. 7.5 was only recently created based on 7.4.1. 7.4.1 will get bug fixes for issues in the 7.4.0 release. 7.5 will get more substantial design changes based on work already started in the 7.5 branches (like the embedded version of Squeezebox server). 7.4.1 should remain stable if you keep up wiht nightly builds. 7.5 may break without notice.
