Lately I've been keeping 7.3, 7.4 and 7.5 trunk servers running all the
time, plus I start and stop other servers with test libraries as needed.
I don't have any issues, other than having to decline firmware
downgrades when connecting to a different version of the server.  For
instance, if I switch Touch from a 7.5 server to a 7.4 server it will
prompt to load an earlier version of the firmware.  Just l-r swipe in
Touch to decline.

Mostly I keep all of the players attached to one server and then
occasionally move one to a different version just to test something. 
The players are pretty good about not automatically connecting to
another server when the one they were connected to goes down, which
helps a lot.  I move older ip3k players between servers using the web
interface.  With Touch and Radio it's very easy to do in the player
interface.

I don't run virtual machines, but I assume that the two different
servers must have different IP addresses, correct?  One very big
difference between 7.3 and later versions is that 7.4 introduced music
library names (Settings > Basic Settings).  7.3 and earlier servers
always used the computer hostname for the library name and having the
same hostname for more than one SqueezeCenter, even though they had
different IP addresses, always confused the hell out of players.  Make
sure your 7.4 and 7.5 servers have distinct music library names.
