assuming you can download the 7.5.1 firmware you want

1. put firmware in Cache/updates/ (exact location of Cache folder
dependent on OS)
2. rename it custom.baby.bin
3. extract the version file and save it as custom.baby.version
unzip -p custom.baby.bin jive.version > custom.baby.version
4. restart SBS

I do this all the time, but rarely if ever for mismatched server v.
firmware revisions. Pretty sure that will make no difference though.

note: your server will never present new firmware while these custom.*
files are in place.
