Since your UNC path on WHS isn't actually a network share on another computer, you may be able to use a local path. According to info on the web, shares are located at D:\shares\<sharename>, so you should be able to designate a local path for the SbS music and playlists folders.
I'm surprised that the UNC path problem on Windows hasn't been fixed yet.
