BISCUIT CORN SEV PURI 
Ingredients
Cream cracker biscuits : 16
Corn kernels, blanched: ½ cup
Potatoes, boiled and mashed: 2 large 
Salt: to taste
Red chilli powder: ¼ teaspoon
Onions, chopped: 2 medium
Chaat masala: as required
Green chutney: 8-10 teaspoons
Red chilli garlic chutney: 2 tablespoons
Sweet date and tamarind chutney : 8-10 teaspoons
Fine sev: 1 cup
Fresh coriander leaves chopped: 2 tablespoons
Raw mango, chopped(optional) : 1 small

Method 
1.Arrange four biscuits on a plate.

2.In a separate bowl, mix mashed potatoes, corn, salt and red chilli powder. 
Divide into sixteen portions. Place each portion on each biscuit.

3.Sprinkle onion and chaat masala.

4.Drizzle half a teaspoon of green chutney, one-fourth teaspoon of red garlic 
chutney and one teaspoon of sweet date and tamarind chutney one on top of the 
other over each biscuit.

5.Cover up all the biscuits with plenty of sev.

6.Sprinkle coriander leaves and raw mango. Similarly prepare the remaining sev 
puris and serve immediately.


Chef's tip: If you want it to be spicier, add more red garlic chutney.

JAMMIE BODGERS 

Ingredients 
Refined flour (maida): 2 cups
Frozen butter, chopped: 125 grams
Caster sugar: ¼ cup + 1 tablespoon
Egg, lightly beaten: 1
Vanilla essence: 1 teaspoon
Filling
Strawberry jam: 4-5 tablespoons
Unsalted butter, softened: 50 grams
Icing sugar: ½ cup

Method 
1.Sift the flour into a bowl and rub the butter with your fingertips. Add the 
sugar, egg and vanilla essence and mix into a soft dough. Knead the dough 
gently on a lightly floured surface until smooth.

2.Preheat the oven to 180°C. Grease two baking trays. 

3.Roll out the dough thinly on a lightly floured surface and cut into rounds 
with a two-and-a-half inch cutter. Re-roll the trimmings and cut into more 
rounds. You should get around thirty rounds.

4.Place fifteen rounds on a baking tray. With a small three-fourth inch 
heart-shaped cookie cutter cut out the centres of the remaining rounds. Place 
the cut-out rounds on the second baking tray. Bake in the preheated oven for 
about twelve minutes or until pale golden. Remove from the oven and transfer 
the cookies to wire racks to cool completely.

5.For the filling, beat together the butter and sugar until smooth and creamy. 
Spread the butter cream evenly on the whole cookies. Spoon a little jam over 
the butter cream, place the cut-out cookies on top, pressing gently so that the 
jam fills the heart-shaped space.

CHOCOLATE AND FRUIT PIZZA 
Ingredients 
Round sponge cake: 1 medium 
Fresh cream: 1 cup
Powdered sugar: 4 tablespoons
Strawberry crush: 3 tablespoons
Kiwi: 2
Strawberries: 8-10
Pineapple slices : tinned4
Almonds, roasted, chopped: 15-20
White chocolate, grated1 cup

Method 
1.Preheat oven to 190°C.

2.Slice the sponge cake horizontally into two. Bake them in the preheated oven 
for three minutes. 

3.Whisk cream along with powdered sugar till it forms soft peaks. Take 
strawberry crush in a bowl, add beaten fresh cream and mix gently.

4.Slice the kiwi lengthwise. Hull the strawberries and slice. Slice the 
pineapple. 

5.Remove the sponge slices from the oven and place on a plate. Spread the cream 
mixture. 

6.Arrange the pineapple slices all round followed by strawberry slices and kiwi 
slices on each of them.

7.Put the roasted nuts in the center and sprinkle white chocolate on top.

8.Serve immediately.

PAPDI PIZZA 
Ingredients 
Crisp flat puris (maide ki papdi) : 20 
Onion : 1 large
Pizza sauce: ¼ cup
Potatoes, boiled and sliced: 2 medium
Mozzarella chees, grated : ¾ cup
Green capsicums, seeded, sliced horizontally: 2 medium
Nylon sev: as required

Method 
1.Preheat oven to 180°C.

2.Cut onion into thick roundels and separate the rings.

3.Grease a baking tray and arrange the papdis on it.

4.Spread pizza sauce on the papdis. Place potato slices on some and onion rings 
on the rest.

5.Place grated cheese in small heaps on each papdi and place green capsicum 
slices on some of them. Sprinkle nylon sev. Put a little pizza sauce on top of 
some of the pizzas.

6.Bake in the preheated oven till the cheese melts.

7.Serve hot.
