Divide into sixteen portions. Place each portion on each biscuit. 3.Sprinkle onion and chaat masala. 4.Drizzle half a teaspoon of green chutney, one-fourth teaspoon of red garlic chutney and one teaspoon of sweet date and tamarind chutney one on top of the other over each biscuit. 5.Cover up all the biscuits with plenty of sev. 6.Sprinkle coriander leaves and raw mango. Similarly prepare the remaining sev puris and serve immediately. Chef's tip: If you want it to be spicier, add more red garlic chutney. ...Join Keralites, Have fun & be Informed. <http://keralites.net/> JAMMIE BODGERS Ingredients Refined flour (maida): 2 cups Frozen butter, chopped: 125 grams Caster sugar: ¼ cup + 1 tablespoon Egg, lightly beaten: 1 Vanilla essence: 1 teaspoon Filling Strawberry jam: 4-5 tablespoons Unsalted butter, softened: 50 grams Icing sugar: ½ cup Method 1.Sift the flour into a bowl and rub the butter with your fingertips. Add the sugar, egg and vanilla essence and mix into a soft dough. Knead the dough gently on a lightly floured surface until smooth. 2.Preheat the oven to 180°C. Grease two baking trays. 3.Roll out the dough thinly on a lightly floured surface and cut into rounds with a two-and-a-half inch cutter. Re-roll the trimmings and cut into more rounds. You should get around thirty rounds. 4.Place fifteen rounds on a baking tray. With a small three-fourth inch heart-shaped cookie cutter cut out the centres of the remaining rounds. Place the cut-out rounds on the second baking tray. Bake in the preheated oven for about twelve minutes or until pale golden. Remove from the oven and transfer the cookies to wire racks to cool completely. 5.For the filling, beat together the butter and sugar until smooth and creamy. Spread the butter cream evenly on the whole cookies. Bake them in the preheated oven for three minutes. 3.Whisk cream along with powdered sugar till it forms soft peaks. Take strawberry crush in a bowl, add beaten fresh cream and mix gently. 4.Slice the kiwi lengthwise. Hull the strawberries and slice. Slice the pineapple. 5.Remove the sponge slices from the oven and place on a plate. Place potato slices on some and onion rings on the rest. 5.Place grated cheese in small heaps on each papdi and place green capsicum slices on some of them. Sprinkle nylon sev.
