+1 to this suggestion.

While technically it might be nice to be able to control these things,
the fact with FFMPEG is that it is only usable with a very select few
combinations, and even then only under strict conditions (any other
combinations either crash immediately, crash on the last frame of the
render, or give useless junk that few players can make sense of
correctly). Having a double-step to choose the output format (FFMPEG
-> Encoding) is really quite clumsy, and as Gustav mentioned, an
"FFMPEG" option will be pointless and confusing for many users.
