I'd choose stainless steel. over aluminum I believe that aluminum can affect taste but that stainless steel has no noticable effect. Aluminum can sometimes interact with things such as acidic food, but stainless is considered inert. Both are long lasting. Aluminum never rusts. Stainless steel is not supposed to rust but sometimes will.
