The new expansion for Race for the Galaxy includes a 1 player variant. I haven't tried it but its supposed to be challenging.
I just bought Le Havre and it can be played with 1 person. Le Havre is by the same author as Agricola (Uwe Rosenberg) and has some similarities (resource game).
