I enjoy Settlers of Catan and Pillars of the Earth, too. If you like the dice/resource aspect of Settlers of Catan, take a look at Stone Age or Kingsburg. If you like less luck, look at Agricola (and Caylus, though I haven't played it yet, so can't speak from experience). For something a little different, Arkadia is fun. We really enjoy Pandemic - the cooperative mechanic is a nice change of pace for us.
