We've been trying some out in the Play-by-forums games with more players. Seeing how some different systems for more players work out; so far it's a mixed bag. The biggest challenge is when you add more players, you end up with that many fewer turns in the course of a game; add that to the limited number of skill cards and it can be a problem. No one as far as we know has done anything with writing up mod rules for an 8 player game.
GerryRailBaron was running a few test 10-player games with all 10 characters and doubled skill decks; that seemed to work pretty well, though you definitely need a moderator of some type at that point as it can get very difficult to track. How that would work out in a F2F game i dunno. With two sets of the game it would probably be pretty doable to mix two skill decks and so on, but you'd need two copies. Alternatively, when Pegasus comes out, it might add enough skill cards (and possibly enough loyalty cards as well) to be able to expand to 7 or 8 players. I know the designers made mention of that possibility, but referenced players making their own 7 player rules mods, not that FF has any plans to add 7+ player capabilities themselves. Obviously for 7 you've got 3 cylons and for 8 3 cylons and a Sympathizer. Still only 1 Pres and 1 Admiral, but your biggest challenge will simply be the length of time it will take to play, which is why, I think, no one has put too much effort into working it out and playtesting 8 player rules.
