They may not have to change their DNS address at all in order to change the 
physical location of the servers.

If they do want to change their DNS address, the conventional way to do 
that is to change the expiration time of the DNS records, in advance.  (You 
can set it to whatever you want it to be, 24 hours is a common default but 
not required.)  So you can change your DNS records in advance of the move 
so that by the time you're finished moving all of the cached DNS data will 
have expired.
