Application don't register their services themselves, they only  
advertise them in their bundle information, and BibDesk does. So if  
you have placed BibDesk in a standard location (like your  
Applications folder) the system should find them. I don't really  
know, but there may perhaps be a delay, so perhaps launching Bibdesk  
or a relogin may help. There should be a BibDesk submenu in the  
Services menu of any app.

Also note that you can turn on automatic completion for any Cocoa  
app, such as TeXShop. This is a different from the Services, and  
plugs directly in the text processing system, using F5 / Escape.  
You'll have to turn that on from the BibDesk preferences.
