I think Chris's non-destructive approach of creating a new field /
keeping the keywords around is a good one.
On the other hand, if you want to overwrite the keywords, I have an
applescript which will replace the existing keywords for selected
publications - it's here: http://dfay.fastmail.fm/bibdesk/

Another solution would be to forget about the keywords field

needed them someday, but could organize your bibliography according
to your own categories.
