Hmm, you might want to consider using vi as editor :-)

Seriously:
If you find pressing several buttons too inconvenient, you can create  
a TeXShop "engine" file, that's a script which does several tasks  
automatically.
See the archive of the MacTeX list for information about that and  
probably also TeXShop's documentation.

Well, that's how LaTeX works, it just needs several runs to accomplish  
specific tasks.
