You probably don't have UTF-8 set as the default encoding, right? When you
open a file with another encoding than the default encoding, BibDesk does
not register the file in the Recent menu, because the this would open the
file with the wrong encoding (or more probable, it would fail to open). If
you always or most of the time use UTF-8 for your .bib file(s), I advice you
to change the default encoding to UTF-8 in the Files preferences.
