The font is determined by the template used by the preview. So you can edit the template file, just making the font larger. To edit the template file, go to the template preference, click the triangle in front of the template name you want to change to expand, and double click the file name for the template (or use the contextual menu). the default templates are all located in ~/Library/Application Support/ BibDesk/Templates/. You can also download the latest nightly build for BibDesk, which allows you to scale the preview.
