It creates the latex using the bibtex style and TeX template as set in  
the Preview preferences. No standard bibtex style will include the  
annote field in the bibliography, so you need to use a custom bibtex  
style (or biblatex style) to get it. For the rest, this is more a  
bibtex rather than a bibdesk question.
