Dishing tool needed. Unless your intended bikes have insane wide clearances and wheel strength & reliability isn't a concern (at which point, why bother) you'll still need one.
It needn't be the best, you might even be able to find a DIY design for one online. But, I use a shop grade Park stand (which is all they made ~17 years ago) and the dish is never close when I first check it, especially on the rear wheel. Maybe others can chime in about another issue you may face: spoke tension gauges. Yes or no.
