In response to Clint Freund's question, I'd suggest looking at the website for 
Working Bikes Co-op in Chicago.  Their website is http://workingbikes.org

Working bikes collects donated bikes, fixes them, and sells them locally (sort 
of like Dream Bikes, I guess), but they also send bikes to developing countries 
in Africa and elsewhere, where they get used for transportation and also to 
power machines, like mills and generators.  The came to the Art Fair on the 
Square two years ago and set up a demo, where people could try running various 
machines with pedal power.

So, naturally, they have some experience with bike-powered generators, and 
they've posted instructions on their website:

By the way... can you tell us what the generator is for?  It would be 
interesting to see it in action when it's complete.
