I'm sorry, but I didn't quite get what you were asking about here ;-). You
want to make a new rpm from the latest sources, and are afraid that the
new RPM will install a server with scripts that don't work?

If you are afraid this will happen, then you can back up your existing
scripts. Then deny IMAP access from anything else than localhost (or with
firewall settings, and other access than from your own desktop machine).

Then install the new server, test to see that it works, then open it up 
for other users. Safe and simple.
