Depends actually..

Some of them may be doing multiple sequence alignment and tracing the
evolutionary tree of a specific type of plant to see why a particualar plant
has a property and others dont.. For example some plants are used
extensively in biofuel production like jatropha ..

Some other institutes may work on extracting antimicrobial products from
plants to obtain a potential antibiotic.. then perform docking and QSAR
studies..

OTher institutes may be working on creating databases of specific family of
plants including all the detailed biological informations .. which would
start from data mining...

These are some of the projects that i could think of.. But the scope of
bioinformatics is not that limited.. There may be N other projects too ..
