Hi,

I guess Polarity will change with pH.

Now i dont now if the shift would be relative to all amino acids.

if it is so then u could simply assign a relative value to all the amino
acids. like non polar amino acid would have 0 and polar amino acids would
have 1,2,3 depending on the degree of polarity.

If u could check the polarity of all amino acids at a particular pH and note
it and then again change the pH and check the polarity again , you may get a
constant value ( if u are very lucky)

Thats my opinion .. others are welcome to object  ..
