I'm going to be taking a February lamb to the processing plant on Monday. She's fairly good sized, if I had to guess how much she weighs, I'd guess upper 40s to lower 60s? Keep in mind that I'm GUESSING. I have a bag of dog food (40lbs) to compare her to.
Does anyone have any idea of WHAT I should expect to take home?
I was thinking of asking for stew meat, legs o' lamb, shoulders, chops & rack... is there anything left for burger or sausage? or would I give up shoulders for stew meat? shoulders for sausage?
Sorry, this is my first processed lamb... I'm totally ignorant!
