Because Gmail is the handler and Firefox is your default browser. QS in this case is just creating the equivalent to a mailto:[EMAIL PROTECTED] URL and opening it. The problem is, when using a web mail interface there's no way to specify an attachment. It would work if you used a "real" mail program like Mail.app or Entourage.
I use Mail.app and have it configured to use my Gmail via IMAP. Works great.
2) I DO have the append text option but my text is not showing up in the documents I am sending them too. Any suggestions?
I have no idea what you mean by this. The Append Text action writes to a text file, it's doesn't send a document.
More info is in the manual, just flip to the second of interest (Mail or Text) and read a few pages :)
