I don't know why that is, but a simple workaround (that has many other benefits besides) is to set Entourage to sync its contacts with Address Book. The option to do this is in Entourage's preferences somewhere. Once you set it, Address Book will always have the same set of contacts that you have in Entourage. And QS will index them properly and regularly by reading Address Book.
