That's a good idea.

The disadvantage of an AppleScript would be the lack of flexibility:
I have more than one category and many different project folders in my
e-mail archive.
So I'd have to define a script for each (relevant) combination.

For those very often used it would make sense.
... a comma trick in that context however could be much more powerful.
