In Mail's preferences check to see which SMTP server is the default
for outgoing messages from whichever account you want to use. I have
both GMail and MobileMe set up in Mail.app, and if I accidentally have
the MobileMe account set to use the GMail SMTP server, it will work,
but the outgoing message will be re-marked and appear to the recipient
as if it was sent directly from the GMail account. I assume Google
does this as a precaution against their SMTP server being used to send
spam with forged sender addresses.
