The applications listed in the third pane should be the same as those that appear in the Open With contextual menu that appears when you right-click on a file in Finder. If the application you want doesn't appear there, it won't appear in QS's third pane either. Since it is up to the application itself to declare what sorts of files it is capable of opening, the only way to change this is to edit the application's innards so that it announces to the operating system that it can open the files you want to open with it.
