I'd probably choose all of them.

Let me sketch a possible usage pattern:

1. Select Contacts in the first pane
2. `/` in
3. See `All Names`, `All Email`, `All Address`, `All Details` (or
something along those lines)
4. `All Details` would basically flatten every detail available with
typical type ahead lookup, so that if `99999` is in an address
somewhere, I could type that and have the list filter down to that
address. Conversely, if I can guess someones mail address (say at my
company), I can type the first characters of their mail address and
then hit paste or mail to them.

I think of this somewhat like the way iTunes.app works. I can `/` in
and see all albums, or all artists, or all songs. Each is a different
level of abstraction over the catalog, with songs being the deepest
and widest dive. So if I know the album I can go that route to make it
easier but if all I know is the name of a song I can get to it.

That sound reasonable?

Alternatively, I would simply expose as a top level item in the
Contacts catalog every email address available, along with the names
of each contact which can be `/` into. I would think that you wouldn't
need to allow `/` into a mail address, I'd think of that as a shortcut
of sorts to get directly to the mail address.
