Unfortunately at this time there's no simple way to edit interfaces as you desire. A HTML/CSS interface has suggested by devs, but it isn't currently on the todo list, and is still somewhat a longterm wish. Your best bet would be to check out the code from https://github.com/skurfer/Nostromo
Turns out Rob, the creator of the Nostromo interface has written the code to allow you to change the font size easily, but it seems these changes were never released.
