That’s a head-scratcher. I change versions multiple times per day and never run into this. But then, my Triggers.plist isn’t 7GB. ;-) I do have a trigger that expects text in the third pane, and it keeps on working, but it’s a “process text” AppleScript, so that could be different. All I can suggest for now is to make a copy of Triggers.plist when it’s working, then make a copy next time it breaks.
