This is generally up to the OS, but if Finder is doing the correct thing, I think what you need to do is get the Open action to be the default instead of “Large Type”. (That will hand the files to the OS and it will decide how to open them.) Go to Preferences → Actions and drag the “Open” action up until it’s higher in the list than “Large Type”. If there are too many to sort through, you can select “File & Folders” on the left to shorten the list. You can always select another action, by the way. Just hit ⇥ and type part of the name, like “op” to get the Open action.
