See the mail preferences If you have your email address in your Contacts, you can make sure your mail is sent as coming from that address. The Mail app *should* (if I remember correctly) use this for sending your emails, but I’m not sure if it works or not.
There’s a comment in the code that says: Try and use the account that corresponds to the custom from address in the Email Support prefs Which seems promising.
