Once you have that running, it should automatically determine the newest version of the iTunes plug-in you can use. (You’ll want to delete the plug-in first if it’s already installed to make sure you don’t have too new a version.)

I created a custom trigger --> Item: iTunes  -->  Action

But in "action", there's no play / stop

There should be both a “Play - Pause” action for iTunes and a global “Play/Pause” command you can select in the first pane. I’m not sure why you can’t select it. It always helps to restart QS after installing new plug-ins just to make sure everything gets loaded, but maybe you tried that. In any case…

The iTunes plug-in is one of few that comes with a bunch of triggers already created (but not enabled). If you go to Preferences → Triggers → iTunes, you should see one for “Play/Pause” is already there. You just need to enable it and choose a keyboard shortcut.
