GGV allows tinkering with Ghostscript settings. Last time I looked at Evince, it didn't have this feature. Has this changed?
BTW I always add -DDOINTERPOLATE to ghostscript command line in order to improve readability of scanned black-and-white material such as old issues of Physical Review.
