I too am in the middle of a new installation and just installed EsoundD and noticed this. As I don't have subversion installed yet on this installation, I just reboot into an old partition every once in a while and make my updates batch style. In my notes it says this: EsoundD - Doc Installation is all messed up. I also noticed that it creates /usr/share/doc/esound/html but we don't use it.
