I think your two best choices for software here are either dovecot or courier-imap. Thankfully, running an imap server is much less complex than running an smtp server. It may even seem like you don't have to do anything other than install some software to get this working after your postfix adventures. BTW, my opinion is that, other than a rather cleaner looking syntax, postfix is really no easier than configuring sendmail. No MTA is really easy to configure; it's just the nature of SMTP (which should drop the "S").
